I the center does not automatically take an aircraft.  What is the correct verbiage?

As stated in the instructional videos on Youtube:

Make sure your scope has focus:  The compass readings are white and not red.
Press C on the keyboard.  A C will appear on the lower left side of the scope.
Click the dot of the aircraft.  You should see a C in the center of the data tag for the aircraft.
The data tag should flash and then turn green.
Radio aircraft <aircraft> Contact <name> center on <frequency>  Example SOUTHWEST THIRTY ONE TWENTY SIX CONTACT ALBUQUERQUE CENTER 133.65.
If you are unsure of the center frequencies there is a map overlay that shows the center sectors and the corresponding frequencies.
